The Salentine winery Varvaglione Vigne e Vini’s experience is pleased to suggest a menu to match the “12 e Mezzo Primitivo del Salento Limited Edition” wine with Mediterranean really interesting courses.
A “typical starter” to begin with are fritturelle: julienne white cuttlefish, julienne carrots, julienne celery fried in Apulian extra virgin olive oil, to taste with “12 e Mezzo Primitivo del Salento Limited Edition”.
The Primitivo wine perfectly matches with first courses made with meat sauce, baked pork or lamb, red meat and game with savoury sauce, as well as with aged ovine cheese. In particular, we suggest a special matching with prime rib beef cut with peas purée, made with the following ingredients: entrecôte steaks, green peas purée, extra virgin olive oil, pine nuts, arugula, parmesan and balsamic vinegar reduction.
