It's a calculated risk taken by the careful producer who entrusts the success of the project to the climate and weather conditions. In the vineyard, measures of protection and care are applied to the grapes, allowing them to express themselves with extreme elegance.<\/p>\n<p><img decoding=\"async\" class=\"alignnone size-full wp-image-20885\" src=\"https:\/\/varvaglione.com\/wp-content\/uploads\/2017\/02\/banner-1.jpg\" alt=\"\" width=\"900\" height=\"500\" \/><\/p>\n<p class=\"x_Didefault\" style=\"text-align: justify;\">A brief pre-fermentation maceration of the destemmed grapes at a temperature of 12\u221214 \n\u2218\n C extracts the characteristic aromas; this is followed by a 20\u221225 day fermentation at a controlled temperature of 24\u221226 \n\u2218\n C. The wine is then separated from the skins to begin malolactic fermentation. Finally, the wine ages for about six months in barriques.<\/p>\n<p class=\"x_MsoNormal translation-block\" style=\"text-align: justify;\"><a href=\"https:\/\/varvaglione.com\/en\/appassimento-rosso-di-puglia\/\" target=\"_blank\" rel=\"noopener noreferrer\" data-auth=\"NotApplicable\" data-linkindex=\"0\"><b>Appassimento Paralupi Rosso di Puglia <\/b><\/a>is a blend of Negroamaro, Primitivo, and Malvasia Nera. On the nose, it offers aromas of ripe red fruit, sour cherry jam, and notes of vanilla and chocolate. On the palate, it is structured, dominated by velvety tannins.
