AUTUMN: THE VINES ARE RESTING, BUT WE ARE BUSY IN THE KITCHEN

The arrival of autumn means the end of the harvest; with the sampling of the new wines, an important phase comes to an end.

But this moment of the year is the beginning of the olive harvest, mushroom hunting and chestnut gathering. Red or orange fruits and vegetables predominate, warming the environment (and our tummies!)

Here at Varvaglione, while the wine is aging in the barrels, we are getting busy in the kitchen, pairing three of our red wines with three typical products from our area. A Malvasia Nera, a Primitivo del Salento and a Primitivo dolce accompany simple dishes made with local ingredients. Here are the traditional recipes:
